Does anyone know how to make a good plate of Enchiladas? I always get them from restaurants but would like to make some on my own.

Hi,
I like cheese filled Enchiladas... I take the flour tortillas, roll them up with grated cheddar/monterey jack cheese filling, put a little Enchilada sauce (I like Olde ElPaso's) on the bottom of a 9 x 12 pan, place the filled tortillas in the pan in a single layer, then top with the rest of the sauce. Bake at 375 for 15 - 20 minutes.... can also fill with shredded chicken, beef, or bean.

I love the chicken/green Chile enchiladas. Those are my favorite! You can usually buy some pre-made green enchilada sauce from the stores/ boil/shred some
chicken, and use Monterrey jack shredded cheese.
